Cooking mode :
The word "tagine" refers to both the dish itself and the cooking utensil in which it is prepared. The tagine, the utensil, is a kind of clay or ceramic dish, with a conical lid which allows slow and gentle cooking.

here is a classic Moroccan tagine recipe:
Ingredients :
500 g lamb meat (shoulder or leg), cut into pieces
2 onions, finely chopped
2 cloves of garlic, crushed
2 tablespoons of olive oil
1 teaspoon ground ginger
1 teaspoon of turmeric
1 teaspoon of ground cumin
1 teaspoon of paprika
1/2 teaspoon cinnamon
Salt and black pepper, to taste
1 bunch fresh cilantro, chopped
1 candied lemon, cut into quarters
1 handful of green or black olives
Instructions :
In a large pot or earthenware tagine, heat the olive oil over medium heat. Add the onions and fry until golden brown.
Add the crushed garlic and the pieces of lamb. Brown the meat on all sides.
Add the spices: ginger, turmeric, cumin, paprika, cinnamon, salt and pepper. Mix well to coat the meat with the spices.
Pour in enough water to cover the meat, reduce the heat to low, cover and simmer for about 1 to 1.5 hours, until the meat is tender.
Add the preserved lemon, olives and half of the chopped coriander. Leave to simmer for another 15 to 20 minutes.
Before serving, sprinkle the remaining chopped coriander over the tagine.
Serve the Moroccan tagine with bread or semolina. Enjoy your food !
